Simple work around until this is an option is to send the proposal then edit the item to be optional afterwards.

I just recently started doing this on my proposals sent out. I give my customer 3 package options, (Platinum, Premium, and DIY) which they are able to choose the package that best fits their needs. I have a line item that explains the warranty, system, and features in general, but this requires the line item to be set > 1 making the subtotal and totals at the end different by $1. The ability to have this turned off and only be able to send out a proposal with optional items would be insurmountably beneficial to my company.

This would be awesome, or a way to break out a proposal in to three different proposals by quality of paint or scope of prep. I realize this could be done with options (which is great) but some customers may enjoy a this this or that option instead of removing entire aspects.
